Ingredients

1/4 cup minced garlic

1/8 cup fig jam

1/8-1/4 cup Parmesan (grated)

1/4 cup Panko bread crumb

1/4 cup scallions

1/2 cup olive oil

9 eggs

Salt

Pepper

Garlic powder

Paprika

1/8 cup milk

Preparation

Preheat oven to 325. Whisk together eggs, a few pinches of minced garlic, salt, pepper, paprika, and milk. Pour egg mixture over a hot skillet with oil in it. Prepare as you would an omelet (i.e., scrape sides in, pour egg to outside of pan). Wait until egg patty is mostly cooked, but there is a bit of raw egg on the top middle. Add the rest of minced garlic, paprika, fig jam, garlic powder, salt, pepper, scallions, on the top of the frittata and spread around. When bottom is golden brown, slide frittata onto a cookie sheet. Bake for 5 minutes. Take frittata out and sprinkle Parmesan, bread crumbs, and a tad bit of olive oil on top of frittata. Bake for about 5-10 minutes or until top is golden brown. Serve on frisbee. Cut with pizza cutter.
