Ingredients

6 parsnips (peeled and sliced)

6 medium yellow potatoes (peeled and sliced)

1/4 cup unsalted butter

1 cup of whipping cream

pinch of paprika

pinch of freshly grated nutmeg

1/2 round of brie

1/2 cup of cubed molasses bread

fresh sage

olive oil

salt

Preparation

Begin with the sauce. Warm the butter, cream, nutmeg, paprika and 1/2 of the brie in a pan on the stove. Stir in the potato and parsnips. Transfer to a casserole dish and bake on 350 degrees for 45 minutes. Meanwhile, put a few tablespoons of olive oil in a pan and fry the sage (leave separated) until crispy. Rremove sage leaves from pan and fry cubed molasses bread in remaining oil. Remove the dish from the oven and sprinkle the bread, sage and remaining brie on top. Bake for another 10 minutes until brie is well melted. Yum!
