Ingredients

1 Tbs olive oil

1/2 large sweet onion, thinly sliced

2 tsp minced seeded jalapeno

8 six-inch tortillas

8 oz brie, diced

1/2 cup chopped fresh cilantro

1/2 large papaya, peeled, and thinly sliced crosswise

Preparation

Heat oven to 425°. Heat oil in skillet over medium-high heat. Add onion and jalapeno; saute until onion is tender, about 4 minutes. Cool slightly.

Arrange 4 tortillas on a large baking sheet. Arrange Brie, then cilantro, papaya and onion mixture on each tortilla, dividing equally.

Bake Quesadillas until cheese melts and filling is heated through, about 8 minutes. Transfer quesadillas to plates and cut into wedges.

Serve with sour cream and salsa, if desired.
