Ingredients
2 lb cleaned black mussels
2 cloves garlic, minced
1/2 cup chopped parsley
4 Tbls olive oil
2 tins peeled tomatoes
Chili powder. Amount depends on taste.
Salt and pepper to taste.
Preparation
In a deep pan or wok heat oil and quickly fry garlic, parsley and chili powder. Add tomatoes and simmer for 2 minutes. Add mussels, salt and pepper and simmer with lid on to steam. When mussels open serve in bowl.
