1 lb. ground bison
1 large onion, chopped
2-3 jalapenos, seeded and chopped
3 cloves of garlic, chopped
1-15oz can red kidney beans
1-15oz can tomatoes
Shredded Cheddar Cheese
Sour Cream
Crackers
Herbs / Staples
1/2 cup of Shiner Bock (or other beer)
2 tbsp. oil,
4 tsp. chili powder
4 tsp. paprika
1 tsp. cumin
1 tsp. oregano
1/2 tsp. parsley
salt and pepper to taste
Preparation
- Heat oil in large pot
- Add garlic and jalapenos until warm.
- Add onions and cook until translucent.
- Add bison and cook until no more pink shows.
- Add all the other ingredients.
- Cook for 30 minutes then move to crock pot.
