Ingredients

Corn Tortillas

Grated Cheddar Cheese (sharp cheddar adds most flavor)

Scrambled Eggs - approx 1-2 eggs per person

Sliced Ham - thinly sliced (off the bone from Safeway is yummy!)

Arugula

Chopped Cilantro

Tapatillo Sauce

Salsa

Preparation

For each person:

  1. Scramble eggs
  2. Place a row of grated cheese onto each of 2 Corn Tortillas, on a plate
  3. Heat tortillas in the microwave for 30 seconds
  4. For each taco, place one slice of ham on top of now melted cheese
  5. Put scrambled eggs on top of ham
  6. Add cilantro, arugula, tapatillo and salsa, to taste
