Ingredients

7 slices of bread

soft butter

1 pint of milk

½ pint of double cream

110g of sugar

110g raisins & sultanas

3 eggs slightly beaten

1tsp vanilla and a pinch of salt

Preparation

  1. Pre-heat oven to 170c, 325f or Gas 3.
  2. Butter large ovenproof baking dish.
  3. Spread the butter on one side of bread.
  4. Line bottom and sides of the dish with buttered bread.
  5. Mix eggs, sugar, raisins and sultanas, vanilla, cinnamon and salt and pour over bread.
  6. Stand for 30 minutes.
  7. Cover with foil and bake for 30 minutes.
  8. Remove lid and cook for a further 30 minutes.
