Ingredients

3 cups thinly sliced yellow onions

1 12 ounce bottle amber beer (I use Sam Adams or Old Dominion)

3 tablespoons apple cider vinegar

1 teaspoon kosher salt

1 teaspoon yellow mustard seeds

1/2 teaspoon celery seed

1 fresh bay leaf

a few grinds of black pepper

bratwurst

rolls

Preparation

prepare charcoal grill.

combine onions, beer, vinegar, salt, mustard seeds, celery seed, bay leaf, and black pepper in a saucepan, bring to a simmer, and simmer over medium-low heat for 20 minutes. 

add bratwurst and simmer until cooked, 8 to 10 minutes
